Stuffed Tex-Mex Yellow Squash

 I like to cook! The other day I tried a new-to-me recipe from my friend Pinterest. S's cousins were staying with us and were my guinea pigs. I cooked up Stuffed Tex-Mex Yellow Squash.

We ate them before I got a photo of the finished product. I thought they were tasty. The recipe lacked spice, so I added a hatch chili since they are in season. I also subbed ground turkey for the beef.
